Lime Cheesecake with Lime Marmalade Dressing coming 2026

Summary
Ingredients:
For the Base:
- 300g digestive biscuits, crushed
- 125g unsalted butter, melted
For the Cheesecake Filling:
- 750g full-fat cream cheese (e.g. Philadelphia)
- 120g Icing Sugar
- Zest of 2 limes
- Juice of 3 limes (about 80ml)
- 300ml double cream
For the Lime Marmalade Dressing:
- 120g lime marmalade
- 1 tbsp lime juice
- 1–2 tsp water (optional, to loosen)

Cooking Method

  1.  Make the Base

    Mix crushed biscuits and melted butter.

    Press into a 23cm springform tin and chill in the fridge for 30 minutes.

  2. Cheesecake Filling

    Beat cream cheese and sugar until just combined.

    Add lime zest, and juice.

    Whip double cream to stiff peaks and fold into the mixture.

    Spoon over the base and smooth the top.

  3. Chill

    Refrigerate for at least 4 hours or overnight.

  4. Lime Marmalade Dressing

    Gently heat marmalade with lime juice until runny.

    Add water if needed.

    Cool before drizzling.

  5. Serve

    Drizzle marmalade dressing over slices.

    Garnish with lime zest or thin lime wedges.
