Minted Lamb Lollipops

Super simple, succulent lamb lollipops with our gardener's mint and yogurt sauce. Perfect for sharing!
340g ground lamb
1 egg
3tbsp Gardeners Mint Sauce
½tsp cumin
½tsp cinnamon
½tsp fine sea salt
½tsp black pepper
3tbsp breadcrumbs
Vegetable oil, as needed
300g natural yoghurt
4tbsp Gardeners Mint Sauce
Pinch of salt

Cooking Method

  1. In a large bowl, break up the ground lamb into small pieces. Add egg, seasoning and mint sauce it. Use your fingers to gently mix together

  2. Roll the mixture into meatballs, about 2 tablespoons at a time. To keep them tender, avoid over-handling them, simply patting and gently rolling them into balls. Put the formed meatballs on a platter or baking sheet. Damp hands will help keep the meat from sticking

  3. Heat a large frying pan over medium high heat. Add 1 to 2 tablespoons of oil to the pan, swirl the oil to spread it over cooking surface, and add as many meatballs as fit in a single layer without touching (this is key to getting the meatballs to brown properly). Cook, turning to brown all sides, until the meatballs are cooked through, about 8 minutes total

  4. To make the mint yogurt sauce, pour the yoghurt into a bowl, add our Gardeners Mint sauce and stir until well mixed. Add salt to taste.

  5. To finish, add lollipop sticks and drizzle with yoghurt mint sauce
