- 200g dark soft brown sugar
- 2 large eggs
- 245g self-raising flour
- 4 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp bicarbonate of soda
- 120ml warm water
- 3 tbsp golden syrup
- 250ml vegetable oil
- For the Cream Cheese Frosting:
- 250g cream cheese
- 125g unsalted butter, softened
- 125g icing sugar
- tsp vanilla extract
- For the Ginger Curd Swirl:
- 3 tbsp ginger curd
