- For the Base:
- 300g digestive biscuits, crushed
- 125g unsalted butter, melted
- For the Cheesecake Filling:
- 750g full-fat cream cheese (e.g. Philadelphia)
- 120g Icing Sugar
- Zest of 2 limes
- Juice of 3 limes (about 80ml)
- 300ml double cream
- For the Lime Marmalade Dressing:
- 120g lime marmalade
- 1 tbsp lime juice
- 1–2 tsp water (optional, to loosen)
