Lemon Meringue Pie

Marvellous marshmallowy meringue with the perfect lemon and lime filling. You'll love our twist on this classic!
1 sweet pastry case (220g)​
1 Jar Cottage Delight Classic Lemon & Lime Curd​
4 Medium Egg Whites ​
220g Caster Sugar ​
2tsp Lemon Juice ​
½tsp Vanilla Extract ​
2tsp Corn Flour

Cooking Method

  1. Line a baking tray with parchment paper, add pastry case and spread Cottage Delight Classic Lemon & Lime Curd into the pastry case. Chill in the fridge for 15 minutes.

  2. Separate the egg whites in a bowl one egg at a time 

  3. Pour the egg whites in a bowl and whisk them until firm peaks form (use electric whisker)

  4. One tablespoon at a time, add the sugar

  5. Add the vanilla extract and gently whisk until combined

  6. Fold in the corn flour. Set mixture aside

  7. Pre-heat oven to 130°C/110°C fan gas mark 1

  8. Once the filled pastry has chilled, pipe or spread the meringue mix onto the curd

  9. Bake pie on the lowest oven rack for 20 minutes (If the meringue is browning quickly, place foil over)

  10. Once baked, remove from the oven, place on a wire rack, and allow to cool at room temperature for 1 hour before placing in the refrigerator to chill. Chill for 4 hours before slicing and serving.
