Roast Vegetable Mediterranean Pasta

Serves 4
A quick and easy pasta dish, packed with tasty Mediterranean flavour.
1 courgette
1 red onion
1 red pepper or, ½ red pepper & ½ yellow pepper
1tbsp tomato puree
½ tin chopped tomatoes
½ bottle Roast Red Pepper Sauce
1 pack of spaghetti
1tsp Italian herbs
1 tsp salt
1tsp black pepper
1tsp vegetable oil

Cooking Method

  1. Cut up all vegetables into small to medium pieces and add to a hot pan with 1tbsp oil, 1 tsp of black pepper and salt.

  2. Stir and then add 1tbsp tomato puree. Let cook for 5 minutes on medium heat stirring continuously.

  3. Fill saucepan with boiling water and add spaghetti. Cook until spaghetti is al dente.

  4. Whilst spaghetti is cooking, add your chopped tomatoes and Roast Red Pepper sauce to the frying pan, put on the lid and cook on low for 10 minutes.

  5. Once pasta is cooked and pasta sauce has simmered, add pasta to the sauce pan and gently stir in until sauce and pasta are thoroughly mixed.

  6. Plate up and finish off with a sprinkle of herbs & garlic bread.
