Creamy Mushroom Starter

A creamy & cheesy starter perfect for cold days!
200g Mushrooms
1tbsp vegetable oil
1 spring onion
½ tsp garlic puree
½ tsp black pepper
½ tsp salt
120ml chicken stock (or vegetable)
1 tbsp Caramelised Onion Chutney
35g cream cheese
½ tsp chilli flakes
30g mix of cheddar and mozzarella or your preferred cheese
Bread for toast dipping

Cooking Method

  1. Fry 200g white mushrooms in oil and add a sliced spring onion, garlic purée, salt and black pepper. Cook for 5 minutes.

  2. Once cooked add chicken stock, cream cheese, chutney and chilli flakes, cook until thickened.

  3. Transfer to a dish and add cheddar and mozzarella, grill until bubbling and golden and toast your bread. Spread the caramelised onion chutney onto your toast ready to dip into this pot of gold.
