Caribbean Baked Fish

- Ingredients:
- 6 tsps olive oil
- 1 red onion, finely chopped
- 1 chopped yellow pepper
- 1 chopped green pepper
- 1 chopped courgette
- Salt and pepper
- 300g prawns
- 125ml milk
- Two large good quality white fish fillets
- Fiery Caribbean Sauce
Cooking Method
Lightly cover a baking tray with olive oil, place the chopped red onion, yellow pepper, green pepper and chopped courgette on the tray and season with salt and pepper.
Place in the oven for 15 minutes.
In a frying pan, add 2 tsps of oil and cook the prawns until heated through.
Meanwhile, add the milk to a deep frying pan and carefully add the two large fillets.
Simmer for 10 minutes until the fish is cooked. Do not allow the milk to boil.
Remove the baked vegetables from the oven, layer the plate with the vegetables, prawns and baked fish.
Drizzle with Fiery Caribbean Sauce
