- A perfect barbecue recipe that works equally as well in the oven at home, combining our Fiery Caribbean sauce with easy to find piri piri rub.
- 4 chicken thighs (chicken breast works equally well)
- 25g Piri Piri seasoning rub mix of your choice
- 4tbsp Cottage Delight Fiery Caribbean Sauce
Score each piece of chicken and coast generously with the Fiery Caribbean Sauce, pushing into all the cuts and ensuring they are well covered. Leave to marinade in the fridge for 30 minutes.
Half way through the marinating, preheat the oven to 220°C/200°C Fan/Gas Mark 7.
Remove the chicken from the fridge and cover all over with the piri piri rub mix before placing on a large baking tray.
Cook in the oven for approximately 30 minutes, or until the skin is crispy.
Serve with chips, or rice and enjoy.
