Introduction

Summary
Ingredients:
1tbsp Sweet Chilli Jam
2 tbsps olive oil
250g feta cheese
3 fresh peach halves
mixed salad leaves

Cooking Method

  1. Make the chilli dressing by mixing 2tbsp Sweet Chilli Jam with a little olive oil, and warm gently until slightly runny.

  2. Cut 250g feta cheese into large chunks and fry in 1tbsp of olive oil in a large frying pan or wok for 30 seconds on each side until lightly coloured.

  3. Remove from the pan and keep warm.

  4. Cut three fresh peach halves into wedges and fry in a tablespoon of oil until slightly softened.

  5. Toss all the ingredients together with mixed salad leaves in a warm salad bowl, pour the Sweet Chilli Jam dressing over and serve with a fresh seeded bread.
