- Elevate the classic traybake recipe with our delicious Tomato, Garlic & Ginger Chutney. A match made in heaven!
- 2 peppers, chopped
- 1 red onion, chopped
- 400g cherry tomatoes
- 1 lemon, chopped into wedges
- 2 large chicken breasts
- 3tbsp olive oil
- 3tbsp Tomato, Garlic & Ginger Chutney
- 120g black olives
- 50g feta, chopped
- 4 rosemary sprigs
In a bowl whisk together the olive oil and Tomato, Garlic & Ginger Chutney. Pour 1/3 of the sauce over the vegetables, sprinkle with salt and pepper and gently combine.
Place the chicken pieces on top and brush with the sauce. Bake in the oven for 25 minutes.
Add the feta, rosemary and olives. Pour over the remaining sauce and return to the oven to bake for another 5-10 minutes or until the chicken is cooked. Serve.
