Mascarpone Pasta

- A quick and easy pasta dish, packed with fresh zingy flavour.
- Ingredients:
- 1 jar of Cottage Delight Roast Red Pepper Sauce
- Olive oil for frying
- 2 onions, finely sliced
- 2 garlic cloves, crushed
- Handful fresh basil leaves, sliced
- 400g fresh penne pasta
- 150g Mascarpone Cheese
- 60g Parmesan, grated
- Handful of bell peppers
Cooking Method
Bring a pot of salted water to a boil and cook pasta for 10 minutes
As the water is boiling, add 1 tbsp olive oil to a large pan on medium-high heat. Finely chop onions and garlic and cook for about 2 to 3 minutes or just about to soften. Add Cottage Delight Roast Red Pepper Sauce and mascarpone and cook for 2 minutes, until combined and heated through
Drain the pasta and add red pepper mixture and basil leaves. Once combined, serve with bells peppers and grated goats cheese – Enjoy!
