Mascarpone Pasta

A quick and easy pasta dish, packed with fresh zingy flavour.
1 jar of Cottage Delight Roast Red Pepper Sauce​
Olive oil for frying​
2 onions, finely sliced​
2 garlic cloves, crushed​
Handful fresh basil leaves​, sliced
400g fresh penne pasta​
150g Mascarpone Cheese
60g Parmesan, grated​
Handful of bell peppers

Cooking Method

  1. Bring a pot of salted water to a boil and cook pasta for 10 minutes

  2. As the water is boiling, add 1 tbsp olive oil to a large pan on medium-high heat. Finely chop onions and garlic and cook for about 2 to 3 minutes or just about to soften. Add Cottage Delight Roast Red Pepper Sauce and mascarpone and cook for 2 minutes, until combined and heated through

  3. Drain the pasta and add red pepper mixture and basil leaves. Once combined, serve with bells peppers and grated goats cheese – Enjoy!
