Katsu Curry Bao Buns

- Ingredients:
- 3 chicken breasts
- 2 tbs Olive oil
- Salt and pepper
- ¾ chicken stock
- 220ml bottle of Cottage Delight Katsu Curry Sauce
- Pack of 6 Bao Buns
- 6 spring onions, shredded length ways
- ¼ cucumber sliced thinly
- 1 medium carrot grated thinly lengthways
- 6 tsp Sesame seeds
Cooking Method
Heat the olive oil over a medium heat and add the chicken breasts and season, cook for 5 minutes
Turn over once golden brown and add the stock and cover pan with a lid
Continue to cook for 7-10 minutes
Once cooked, shred chicken with two forks in a bowl
Add half a bottle of the Katsu curry to the shredded chicken and mix until coated
Warm the buns in the oven for 5 mins
Assemble buns by filling with the cucumber, onion and carrot
Top with the shredded chicken and garnish with tsp of sesame seeds per bun
Serve with extra Katsu sauce for dipping
