French Dijon Mac & Cheese

Summary
Ingredients:
200g mature cheddar cheese
400g macaroni
1 leek, trimmed and cut into thin rings
1 tbsp butter
1 tbsp plain flour
1 pint milk
2 tsps French Dijon Mustard
Salt and black pepper to taste

Cooking Method

  1. Preheat oven 190 degrees C / gas mark 5.

  2. Bring a large pot of lightly salted water to a boil, grate cheese.

  3. Cook macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite. Drain.

  4. Melt butter in a saucepan over medium-low heat. Add flour, cook and stir for 1 minute. Stir in milk gradually, cook until sauce thickens.

  5. Add almost all of the grated cheese, leaving a small handful behind, and French Dijon Mustard. Season with salt and pepper. Stir leek rings into the sauce.

  6. Pour sauce into the pot of macaroni and stir well. Pour into a baking pan.

  7. Bake in the preheated oven until bubbling and golden, about 20 minutes. Add remaining grated cheese on top about 5 minutes towards the end to crisp.
