French Dijon Mac & Cheese

- 200g mature cheddar cheese
- 400g macaroni
- 1 leek, trimmed and cut into thin rings
- 1 tbsp butter
- 1 tbsp plain flour
- 1 pint milk
- 2 tsps French Dijon Mustard
- Salt and black pepper to taste
Cooking Method
Preheat oven 190 degrees C / gas mark 5.
Bring a large pot of lightly salted water to a boil, grate cheese.
Cook macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite. Drain.
Melt butter in a saucepan over medium-low heat. Add flour, cook and stir for 1 minute. Stir in milk gradually, cook until sauce thickens.
Add almost all of the grated cheese, leaving a small handful behind, and French Dijon Mustard. Season with salt and pepper. Stir leek rings into the sauce.
Pour sauce into the pot of macaroni and stir well. Pour into a baking pan.
Bake in the preheated oven until bubbling and golden, about 20 minutes. Add remaining grated cheese on top about 5 minutes towards the end to crisp.
