Bruschetta Chicken

2 Chicken Breasts
6 chopped vine tomatoes
1 red onion, minced
1 cloves garlic, minced
1 large handful basil, chopped
2 tbsp extra virgin olive oil
1 tsp salt
1 tsp pepper
1 tsp dried oregano
2 tbsp Oak Aged Balsamic Dressing

Cooking Method

  1. Add 1/2 tsp of salt, pepper and oregano and 1 tbsp of olive oil to a freezer bag with the chicken and turn to coat. Leave in fridge whilst making the bruschetta.
  2. Add all of the tomatoes, garlic and onion to a large bowl with 1 tbsp of olive oil and half tsp of salt, pepper and oregano. Secondly, add as much of the balsamic as you like to the mixture. We recommend 1.5 tbsp. Stir to combine. Preheat grill.

  3. Grill chicken for 5-6 minutes per side, or until chicken is cooked through. When you feel the chicken is about a minute from being fully cooked, add one slice of mozzarella to each breast. Grill again for the last minute.
  4. Remove from the grill to a serving plate and top each chicken breast with the bruschetta mix and drizzle with extra balsamic dressing if needed. Serve with pasta or creamy mashed potato.
