White Chocolate & Passion Fruit Scones

- Ingredients:
- 315g Homepride self-raising flour
- 60g cold butter, chopped
- 170ml cold milk, plus extra to glaze
- 80g white chocolate chips
- Clotted cream, to serve
- Cottage Delight Passion Fruit & Mango Curd, to serve
Cooking Method
Preheat your oven to 200°C (180°C fan) and prepare a baking tray by greasing and lining it with baking paper.
In a large bowl, sift the dry ingredients together, then use your fingertips to rub in the butter until the mixture forms fine crumbs.
Next, create a well in the centre of the bowl and add milk. Using a round-bladed knife, gently cut through the mixture until it forms a soft dough. You may need to add an additional 1-2 tablespoons of milk to achieve the right consistency. Once the dough comes together, fold in your white chocolate chips.
Turn the dough out onto a lightly floured surface and knead it briefly until smooth. Shape the dough into a 4cm-thick circle.
Using a 5.5cm cutter that’s been lightly dusted with flour, cut out rounds from the dough. Place the scones side by side on the prepared baking tray. Brush the tops with extra milk to give them a glaze.
Bake for 12-15 minutes, or until the scones are golden brown and have risen nicely. Serve warm with our Passion Fruit & Mango Curd and clotted cream. Enjoy!
