Whipped Feta & Tomato Tart

1 sheet puff pastry
1 egg
110g feta cheese
55g Greek yogurt
2Tbsp olive oil + more for serving
1 garlic clove
2 - 3 large tomatoes, sliced
salt, to taste
Black pepper, to taste
2Tbsp Cottage Delight’s Sweet Garlic Pickle

Cooking Method

  1. Preheat the oven to 220˚C/ 200˚C fan.

  2. Place one sheet of puff pastry onto a parchment-lined baking sheet, score a 1 inch border around the edge of the sheet using a knife. Then, using a fork, prick holes all over the centre (within the border). Brush the entire sheet of pastry with egg wash, and bake until puffed and golden, about 15 minutes.

  3. In the meantime add feta cheese, greek yogurt, olive oil, and garlic to a blender and pulse until smooth.

  4. When the pastry has finished baking, use a spoon to press the center of the pastry down to create a recessed area, making sure to leave the 1″ border untouched.

  5. Spread over the whipped feta, top with a layer as thick as you’d like, of Sweet Garlic Pickle and follow with the sliced tomatoes. Season the tomatoes with a generous sprinkle of salt and freshly cracked black pepper. Enjoy warm or cold.
