Sweet & Spicy Salmon

A salsa twist on a salmon salad with an added kick!
2 Boneless salmon fillets
Half Red Onion
50g Fresh mango
Half Cucumber
1 Small red pepper
Small bunch coriander
1 Lime
4Tbsps Honey
4Tbsps Stingin’ Scorpion Chilli Sauce

Cooking Method

  1. Pre-heat oven to 200°c/180°c fan.

  2. Glaze salmon fillets with 2Tbsps honey and Stingin’ Scorpion Chilli Sauce, wrap in foil and cook for 18 minutes.

  3. Meanwhile prepare the salsa salad, by finely chopping onion, mango, red pepper, cucumber and handful of coriander. Mix together and leave to one side.

  4. Once the salmon is cooked, take out of the foil and glaze with remaining 2Tbsps honey and Stingin’ Scorpion Chilli Sauce. Add to the plate with salsa and a handful of coriander. Feeling hungry? Serve with couscous or crusty bread.
