Speedy Chicken Tikka Fajitas

- Ingredients:
- 2 chicken breasts, finely sliced
- 1 red onion, finely sliced
- 1 red pepper, sliced
- 1 red chilli, finely sliced (optional)
- ½ jar Tikka Masala Curry Paste
- Olive oil
- 1 Yellow Pepper
- Grated Cheese
- Sour Cream to serve
- 8 tortillas
- Mixed Salad to serve
Cooking Method
Finely slice peppers, onions and chilli and set aside
Finely slice chicken breasts and place in a bowl with Tikka Masala Curry Paste. Marinade for 10 minutes
Meanwhile, heat olive oil in a pan over high heat. Add the onions and cook for 2 minutes. Then add the marinated chicken and cook for 5 minutes. Finally add peppers and chilli and cook for a further 2 minutes or until the chicken is cooked through. Stirring continuously
Once cooked, serve with tortilla wraps, grated cheese, sour cream and mixed salad
Slow Cooker Alternative: Turn your slow cooker on high and add the chicken to seal. Then add chilli, peppers, Tikka Paste and cook on high for 2-3 hours or low for 4-6 hours. Once cooked, serve with tortilla wraps, grated cheese, sour cream and mixed salad
