Enchiladas

- Load tortillas with a variety of fillings, then top with tomato sauce and cheese to make enchiladas. Our favourite Mexican-style dish!
- Ingredients:
- 1–2 tbsp oil
- 2 red pepper
- 1 red onion
- 4-6 tortilla wraps
- 3-4 chicken breasts
- 150ml chicken stock
- Pinch of Salt
- 150g grated cheese
- Sundried Tomato Chilli & Garlic Sauce
- Jalapenos (optional)
- Sour cream, to serve (optional)
Cooking Method
Finley chop onion, and slice pepper
Cut the chicken breasts into strips
In a pan, cook chopped chicken and preheat the oven to 180°C /fan 160°C /gas 4
Put the mixture into the wraps and fold and place into oven proof dish
Pour over Tomato Sauce and top with cheese
Place into the oven for 20 minutes and serve with sour cream and jalapenos
