Roasted Pepper Salad with Feta, Pine Nuts & Basil

- Ingredients:
- 4 Bell Peppers
- 2Tbsps Olive Oil
- Handful Fresh basil
- 3Tbsps Pine Nuts
- 100g Feta Cheese
- 100g Fresh Olives
- 6Tbsps Roast Garlic & Red Pepper Dressing
- Crusty Bread (to serve)
Cooking Method
Preheat the oven to 220⁰C/200⁰C fan. Halve peppers and halve again and place on a baking tray. Cook for 10-15 minutes until soft and charred.
Once cooked, set aside to cool. Then peal off the charred skin.
In a frying pan, toast the pine nuts for 1-2 minutes, set aside.
For assembly, place peppers on the plate with olives, toasted pine nuts, crumbled feta and drizzle with Roast Garlic & Red Pepper Dressing. Serve with fresh basil and a side of crusty bread.
