Roasted Pepper Salad with Feta, Pine Nuts & Basil

Super fresh and full of flavour!
4 Bell Peppers
2Tbsps Olive Oil
Handful Fresh basil
3Tbsps Pine Nuts
100g Feta Cheese
100g Fresh Olives
6Tbsps Roast Garlic & Red Pepper Dressing
Crusty Bread (to serve)

Cooking Method

  1. Preheat the oven to 220⁰C/200⁰C fan. Halve peppers and halve again and place on a baking tray. Cook for 10-15 minutes until soft and charred.

  2. Once cooked, set aside to cool. Then peal off the charred skin.

  3. In a frying pan, toast the pine nuts for 1-2 minutes, set aside.

  4. For assembly, place peppers on the plate with olives, toasted pine nuts, crumbled feta and drizzle with Roast Garlic & Red Pepper Dressing. Serve with fresh basil and a side of crusty bread.
