- Forget ordering takeaway and make your own Thai red curry at home. This dish takes just 30 minutes to cook and it's bursting with flavour.
- Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 3-4 chicken breasts
- 400ml coconut milk
- 60g mixed peppers, diced
- Thai Red Curry Paste
- Chopped chillies (optional)
- Baby sweetcorn (optional)
- Fresh coriander (optional)
- 1 pack of Cottage Delight Thai Jasmine Coconut Rice
Cooking Method
Heat the oil in a pan and cook the chicken along with the onion for approximately 10 minutes.
Add the mixed peppers followed by the coconut milk and Thai Red Curry Paste. Simmer until sauce thickens and chicken is cooked. If the sauce is too thick, simply add up to 200ml water.
Serve with Cottage Delight Thai Jasmine Coconut Rice.
