Pea, Ham & Mint Risotto

- Ingredients:
- 1Tbsp olive oil
- 700ml boiling stock
- 1 Sachet Pea, Ham & Mint Risotto
- Parmesan Shavings (optional)
- 2 Rashers bacon (optional extra)
- 50g Peas (Optional extra)
Cooking Method
Add olive oil to a pan on medium/high heat and add the risotto mix. Sweat for 1 minute
Add 300ml of stock. Cook on moderate heat until most of the liquid has been absorbed and add remaining stock. Stir continuously until liquid has been absorbed
Optional: In a small pan, fry bacon rashers until crispy, chop into small pieces and add to the risotto with peas. Turn the heat down and cook for a further 3 minutes until the peas are cooked.
To finish, shave parmesan cheese over risotto and serve!
