Pea, Ham & Mint Risotto

1Tbsp olive oil
700ml boiling stock
1 Sachet Pea, Ham & Mint Risotto
Parmesan Shavings (optional)
2 Rashers bacon (optional extra)
50g Peas (Optional extra)

Cooking Method

  1. Add olive oil to a pan on medium/high heat and add the risotto mix. Sweat for 1 minute

  2. Add 300ml of stock. Cook on moderate heat until most of the liquid has been absorbed and add remaining stock. Stir continuously until  liquid has been absorbed

  3. Optional: In a small pan, fry bacon rashers until crispy, chop into small pieces and add to the risotto with peas. Turn the heat down and cook for a further 3 minutes until the peas are cooked.

  4. To finish, shave parmesan cheese over risotto and serve!
