Mozzarella Bruschetta with Balsamic Garlic Glaze

A delicious burst of flavour!
325g halved plum tomatoes
4tbsp olive oil
30g fresh basil
3 cloves garlic, thinly sliced
200g fresh mozzarella pearls
Fresh cracked pepper
Sea salt
1 bottle Balsamic Garlic Pizza Glaze
French bread, sliced

Cooking Method

  1. To make bruschetta mixture, in a large bowl combine tomatoes, 2 tablespoons olive oil, 1 tablespoon balsamic glaze, 20g chopped fresh basil, sliced garlic and a couple pinches of salt and pepper. Set aside while you broil crostini

  2. Brush sliced French bread with 1 tablespoon olive oil, brushing it in an even layer across the bread

  3. Broil for 1-2 minutes

  4. Then flip sliced French bread over and brush with another tablespoon olive oil. Broil for another minute or so

  5. Top toasted crostini with your prepared bruschetta mixture and add mozzarella pearls

  6. Finally, drizzle with Balsamic Garlic Pizza Glaze, garnish with basil and enjoy!
