- A healthy alternative to a main meal!
- 250g Moroccan Spiced Couscous
- 1 medium butternut squash, peeled, seeded and diced
- 2tbsp olive oil
- 2 tbsp butter
- Salt and pepper
Preheat oven to 220°C / 200°C fan/ Gas 7.
Toss the butternut squash with the olive oil, salt and pepper, and then spread into one layer on a baking sheet. Bake in preheated oven for 10-15 minutes. Set aside.
Cook the rice as per packet instructions.
Remove from heat, and let rest for 5 minutes. Then fluff with fork. Add in the butternut squash. Stir until well-combined.
