Mediterranean Chicken

A super easy fresh and zingy meal to please the whole family!
6 Skinless and boneless chicken thigh fillets (Cut into strips)
2Tbsp olive oil
2Tsp sumac
160g Green olives
1 Lemon (halved)
2 Garlic cloves (crushed or grated)
½Tsp Chilli flakes
200g Greek yogurt
4Tbsp Gardeners mint sauce
4 Flatbreads
1 Little gem lettuces (shredded)
Cucumber (cubed)
80g Pomegranate seeds

Cooking Method

  1. Cut the chicken into strips and place in a bowl with olive oil, chilli flakes, sumac, juice of half a lemon and 2 crushed garlic clothes. Mix together and allow to chill in the fridge for 10 minutes. Preheat the grill to high.

  2. Once the chicken has marinated, place on a baking tray and grill for 12-14 minutes, until the chicken is cooked and charred on the outside. Warm flatbreads for two minutes.

  3. While the chicken is grilling, combine Greek yogurt and Cottage Delight Gardeners Mint Sauce. Set aside.

  4. To assemble, spread a large spoonful of mint yogurt on each flatbread, then top with shredded lettuce, cucumber segments, chicken, pomegranate seeds and olives. For extra freshness, squeeze the remaining half lemon over the flatbreads and serve with extra mint yogurt and cucumber segments.
