- A refreshing frozen mango & passion fruit curd cocktail.
- 1 Jar Cottage Delight Passion Fruit & Mango Curd ice cubes
- 180ml white rum
- 4tbsp sugar syrup (adjust to taste)
- 120ml fresh lime juice
- 2 mango's
- Fresh mint, Lime and sugar to garnish
Freeze Mango and Passionfruit All Butter Curd in an ice cube tray and leave overnight
Once frozen, add the ice cubes, rum, sugar syrup, lime juice and flesh of two mango’s to a blender and blitz until smooth. Once blended, leave to one side
Roll the top edge of your jam jar or cocktail glass in 1Tbsp of sugar syrup and then roll in 1Tbsp of granulated sugar.
Pour the cocktail mixture into the jam jar and garnish with fresh mint and lime.
