Loaded Potato Skins

Quick, easy and super delicious!
2 Baking potatoes
2Tbsp Cottage Delight Horseradish
200g Mascarpone
4 Spring onions (finely chopped)
150g Bacon lardons
Salad to serve (optional)

Cooking Method

  1. Cut halfway into the potatoes, glaze with olive oil and air fry for 45 minutes on 200C or bake in the oven for 1 hour.

  2. Meanwhile, fry the bacon and leave to cool. Once cooled, mix bacon with horseradish and mascarpone and leave to one side.

  3. Once crispy and golden, remove potatoes from the air fryer or oven and halve. Scoop out the middle and combine with the horseradish mix. Then add the mixture to the potato skin, top with chopped spring onions and grill for 2-5 minutes until slightly toasted.
