Key Lime Pie

A zestier twist on a classic with a buttery biscuit base.
220g Digestive biscuits
70g Unsalted butter (melted)
300g Double Cream (whipped)
3Tbsp Icing Sugar
2 Jars Zesty Lime Curd

Cooking Method

  1. Blitz biscuits in a food processor or use a rolling pin and sealable bag. Once they resemble fine crumbs, mix in a bowl with melted butter and press the crumbs into the base and up the sides of a 9inch tart tin. Chill for ten minutes in the fridge.

  2. Once chilled, spoon two jars of Cottage Delight Zesty Lime Curd over the base and spread evenly. Chill for 20 minutes or overnight.

  3. Meanwhile, whip cream and icing sugar until soft peaks. Transfer to a piping bag with star nozzle and refrigerate until the tart has set.

  4. Finally, Once the tart has chilled for 20 minutes, remove from tin and pipe on the cold cream.
