- Bring the fire with this delicious vegetarian flatbread.
- Ingredients:
- 1 Aubergine
- 2 Courgettes
- 4tsp Pickled red cabbage
- 2 mixed peppers
- 2tbsp extra virgin olive oil
- 4 Flatbreads
- 200g Sour Cream
- 1 Bottle Stingin Scorpion Sauce(For dipping)
- 80g mixed leaves
- 2 x 250g blocks halloumi, each cut into 6 strips
Cooking Method
Slice the courgettes and aubergine length ways and cut in half. Cut the peppers into chunks and pan fry in 1tsp oil until soft and charred. Remove from the pan.
Meanwhile, slice the halloumi and pan fry until golden and crispy on both sides.
In the pan used for the vegetables, add the flatbreads to warm through before assembling.
Finally, place the charred vegetables, halloumi, pickled red cabbage and mixed leaves on the flatbread and drizzle with Scorpion sauce and a dollop of sour cream. Serve the remaining hot sauce on the side.
