Easy Fish Pie

- Ingredients:
- 50g salted butter
- 25g Plain flour
- 4 Spring onions
- 400ml Milk
- Small bunch chives (chopped)
- 2 Salmon fillets, cubed
- 250g Smoked Haddock, cubed
- 150g Cooked prawns
- 100g Peas
- 100g Chopped celery
- Handful Grated cheese
- 1kg Potatoes (peeled and cut into chunks)
- 5Tbsp Gourmet Hot Dog Sauce
Cooking Method
Heat the oven to 200C/fan 180C/gas mark 6. Peal the potatoes, halved and boil in a saucepan for 20 minutes or until tender
In the meantime, mix 40g butter, plain flour and finely sliced spring onions in a pan and heat gently until the butter has melted, stirring regularly for 1-2 mins.
Gradually whisk in 400ml milk using a balloon whisk if you have one. Bring to the boil, stirring to avoid any lumps and sticking at the bottom of the pan. Cook for 3 minutes until thickened.
Take off the heat and stir in prawns, cubed salmon, cubed cod, 1 tsp Gourmet Hot Dog Sauce, a small bunch of finely snipped chives, peas and chopped celery and transfer to an oven dish.
Drain potatoes thoroughly and mash with a splash of milk, knob of butter and 4 Tbsps Gourmet Hot Dog Sauce. Spoon the mashed potato on top of fish mix and sprinkle with a handful of grated cheddar cheese.
Pop in the oven for 20-25 mins or until golden and bubbling at the edges.
