Crunchy Ploughman's Tart

Serves 6
1 pack ready-rolled puff pastry
1 tbsp olive oil
1 large red onion, thinly sliced
100g extra mature Cheddar, thinly sliced
1 small handful watercress
1 small apple, thinly sliced
1 jar Crunchy Ploughman’s Pickle

Cooking Method

  1. Preheat the oven to 180°C. place pastry on a large baking sheet. Score a border around the edges. Prick the inside all over with a fork, then bake for 15 mins.

  2. When base is ready, take out of the oven and press down the pastry base with the back of a spoon. Cover the base with as much Crunchy Ploughman’s Pickle as you like, then scatter the onions and cheese over the top. Leave a handful of cheese to the side. Bake for 5 mins.

  3. Place onto a serving board/plate. Scatter the watercress, left over cheese and the apple on the top. And enjoy!
