Chicken Satay Skewers

Summary
We've teamed up with Nuts Plus to bring you these super easy Chicken Satay Skewers!
Ingredients:
500g chicken fillets or chicken pieces
3 tbsp Nuts Plus Roasted Peanut Butter
250ml coconut milk
1 tbsp soy sauce
1 tbsp honey
3tbsp Cottage Delight Thai Sweet Chilli Sauce
juice of 1 lime
1tsp garlic paste

Cooking Method

  1. To make the sauce put the peanut butter, coconut milk, soy sauce, honey, Thai Chilli Sauce , lime juice and garlic in a bowl & mix until fully combined and smooth.

  2. Pour half the satay sauce into a saucepan and set aside. Add the chicken to the rest of the sauce in a bowl so that they are all coated. Thread the chicken onto wooden or metal skewers and transfer to a foiled baking tray.

  3. Cook the skewers under a medium grill for 10-15 minutes, turning once until they are evenly cooked and lightly browned on each side. Whilst the chicken is cooking, gently heat the remaining satay sauce in the saucepan on a low heat until warmed through.

  4. Pour the sauce into a bowl and serve with the chicken skewers. Sprinkle over coriander to finish. Enjoy!
