- 500ml double cream
- 3 tbsp icing sugar
- 1 tsp vanilla extract
- 4 meringue nests, crushed
- 160g Peach Bellini Jam
- 2 ripe peaches, finely diced or sliced
- Fresh mint or edible flowers for garnish

Cooking Method
Whip the cream with icing sugar and vanilla until soft peaks form.
Layer in glasses: Start with crushed meringue, then whipped cream, then a generous spoonful of Peach Bellini jam.
Add a few peach cubes or slices, then repeat the layers.
Finish with a swirl of jam, a sprinkle of meringue, peach slices/cubes and mint or edible flowers.
Serving Tip: Use coupe glasses for a cocktail-inspired finish.
