Ingredients:
500ml double cream
3 tbsp icing sugar
1 tsp vanilla extract
4 meringue nests, crushed
160g Peach Bellini Jam
2 ripe peaches, finely diced or sliced
Fresh mint or edible flowers for garnish

Cooking Method

  1. Whip the cream with icing sugar and vanilla until soft peaks form.

  2. Layer in glasses: Start with crushed meringue, then whipped cream, then a generous spoonful of Peach Bellini jam.

  3. Add a few peach cubes or slices, then repeat the layers.

  4. Finish with a swirl of jam, a sprinkle of meringue, peach slices/cubes and mint or edible flowers.

  5. Serving Tip: Use coupe glasses for a cocktail-inspired finish.
