Cheese and Tomato Quiche

Deliciously smooth and crumbly with an added zing!
200g shortcrust pastry block
20g basil, chopped​
120g shredded mozzarella cheese​
200ml single cream​
3 eggs, beaten​
1tsp salt​
a pinch of pepper​
1/2 jar Cottage Delight Bloody Mary Salsa

Cooking Method

  1. Preheat the oven to 200°C/180°C fan gas mark 4

  2. Roll out and line a tart tin with pastry, rest the pastry case in the fridge for 30 minutes before baking.

  3. Once chilled, place parchment paper over pastry and fill with baking beans. Blind bake the pastry case for 12-15 minutes until just turning golden

  4. Mix the eggs, single cream, salt and pepper in a jug, cover and leave to one side

  5. Remove the pastry from oven and discard baking beans

  6. Evenly spread a layer of Cottage Delight Bloody Mary Salsa in the pastry case, add the cheese and basil and pour the egg mixture over the top until 90% full

  7. Bake for 30 minutes until the quiche is fully cooked

  8. Allow to cool slightly on a wired rack before serving
