Vegan Thai Massaman Curry

Lots of delicious ingredients with a very easy method.
2tbsp olive oil
1 onion, diced
400ml coconut milk
100g new potatoes, quartered
60g red peppers
30g crushed roasted peanuts
200g Thai Massaman Curry Paste
Baby sweetcorn (optional)
Mangetout (optional)

Cooking Method

  1. Heat the oil in a pan and pan fry the onions.

  2. Add the coconut milk, Thai Massaman Curry Paste, potatoes, red peppers and peanuts. Simmer until sauce thickens. If the sauce is too thick, simply add up to 200ml water.

  3. Serve with rice, noodles or salad.

  4. For extra flavour, add kaffir leaves to taste. Also, why not add your favourite pulses or vegetables for an extra indulgent curry. Or try with chopped tomatoes instead of coconut milk.
