- Our Thai Sweet Chilli Sauce has just the right kick as a dipping sauce, but also livens up this delicious sweet potato bake.
- 1 sheet puff pastry
- 2 large sweet potatoes cut into wedges
- 320g sour cream
- Drizzling of Thai Sweet Chilli Sauce
Preheat the oven to 200 C. Place the cut sweet potato wedges onto a baking tray, lightly brush with oil and bake for 15 mins.
Remove from oven. roll the pastry out and score around each side to create a lip around the edges. Place on to a paper lined baking tray.
Spread sour cream over the base, then lay the sweet potatoes on top, season with salt and pepper. Drizzle with Thai Sweet Chilli Sauce. Place into the oven and bake for 15 mins or until the pastry edges are puffed and golden.
To finish drizzle with extra Thai Sweet Chilli Sauce to suit your taste.
