Thai Red Curry

- Ingredients:
- 2tbsp olive oil
- 1 onion, diced
- 650g raw prawns
- 400ml coconut milk
- 60g mixed peppers, diced
- 200g Thai Red Curry Paste
- Chopped chillies (optional)
- Baby sweetcorn (optional)
- Fresh coriander (optional)
Cooking Method
Heat the oil in a pan and lightly cook the prawns along with the onion for approximately 10 minutes.
Add the mixed peppers followed by the coconut milk and Thai Red Curry Paste. Simmer until sauce thickens and chicken or prawns are cooked. If the sauce is too thick, simply add up to 200ml water.
Serve with rice, noodles or salad.
