Serves 4
Rich and exploding with flavour this simple recipe is a great addition to sausages and mash or many beef dishes.
1 large red onion, chopped finely
500ml beef stock
80ml dry red wine
2tbsp unsalted butter
2tbsp plain flour
1tbsp Cottage Delight Sticky Balsamic Onions
1/2tbsp Cottage Delight Juicy Redcurrant Jelly

Cooking Method

  1. Melt 1tbsp of butter in a pan and begin frying your onions over a medium heat.

  2. Once they start to take on colour, turn down to a low-medium heat and fry until soft and caramelized. Approximately 30 minutes. (The lower and slower you fry the onions, the more they’ll caramelize and the sweeter they’ll be).

  3. Melt another tbsp of butter in the pan and stir in the flour until it forms a paste. Stir in the wine and slowly stir in the beef stock, whisking as you go to ensure no lumps.

  4. Add your Sticky Balsamic Onions and Juicy Redcurrant Jelly and season to taste.

  5. Allow to simmer, stirring occasionally until you reach the desired thickness. (Bare in mind, the gravy will thicken as it cools.)

  6. Serve and enjoy!
