Red Thai curry

A deliciously rich curry suffused with coriander, lime leaf and shrimp paste.

Method

  1. Heat the oil in a pan and brown the chicken, or briefly cook the prawns
  2. Add the Cottage Delight Red Thai Curry Paste
  3. Fish sauce or light soy sauce to taste
  4. and fry for a few minutes
  5. Then add the coconut milk, stir and cover until the sauce thickens and has reduced slightly.
  6. Add the fish sauce or soy sauce if required
  7. Garnish with coriander and serve with rice

Tip... You can also add a small amount of brown or palm sugar to sweeten if required.

Marinade use 100g Cottage Delight Red Thai Curry Paste

  • Fish sauce or light soy sauce to taste

to cover chicken or fish cut into 20mm strips and marinade for 1 1/2 hours and then bake in a hot oven for 20 minutes.
