Serves 4
A perfect mid-week filling dinner suitable for all the family, using your store cupboard staples.
2tbsp Olive oil
1tsp fresh ginger, diced
1tsp fresh garlic, diced
1 tin peeled plum tomatoes
100ml Roast Red Pepper Sauce
350g meatballs, cooked
100g mozzarella cheese

Cooking Method

  1. Preheat oven to 200°C/180°C fan/gas 6.

  2. In a non-stick pan, heat the oil and saute the ginger and garlic until golden brown. Add the tomatoes and Roast Red Pepper Sauce.

  3. Pour the sauce mixture into an ovenproof dish and place the fully cooked meatballs on top of the sauce.

  4. Sprinkle the mozzarella over the meatballs and bake in the oven for 15 minutes or until the cheese has fully melted.

  5. Remove from oven and serve with pasta or garlic bread.
