- 4 chicken thighs
- 600g new potatoes
- 4 peppers, sliced
- 4tbsp Spicy Piri Piri Chutney
- Fresh oregano to garnish
Preheat the oven to 220°C/fan 200°C/gas 7. Score each piece of chicken and coat with the Spicy Piri Piri Chutney, pushing into all of the cuts. Leave to marinate for at least 30 minutes.
In a pan of salted water partly cook the potatoes for around 5 minutes. Drain and set aside. In a large frying pan over a low heat sear the chicken on all sides for 4-5 minutes. Add the chopped peppers and potatoes, then coat everything in the juices from the pan.
In a large lidded casserole dish add all of the mixture, season well and place into the oven to roast for 30-35 minutes or until the chicken is cooked through. Serve with a sprinkling of oregano.
