Ingredients:
375ml milk
60g desiccated coconut
50g unsalted butter, melted
1 egg
50g plain flour
220g caster sugar
160g Pink Grapefruit Curd
icing sugar, for dusting

Cooking Method

  1. Preheat the oven to 160°C/140°C fan/gas 3.

  2. Combine milk, coconut, butter, egg, flour, caster sugar and Pink Grapefruit Curd into a blender and blend until smooth.

  3. Divide the mixture evenly between 6 x 250ml ovenproof ramekins.

  4. Arrange the ramekins on an ovenproof tray and bake in the oven for 18–20 minutes or until set.

  5. Dust with icing sugar and serve.
