Pink Grapefruit Puddings



375ml milk

60g desiccated coconut

50g unsalted butter,melted

1 egg

50g plain flour

220g caster sugar

160g Pink Grapefruit Curd icing sugar, for dusting

Method: Preheat the oven to 160°C/140°C fan/gas 3.

Combine milk, coconut, butter, egg, flour, caster sugar and Pink Grapefruit Curd into a blender and blend until smooth.

Divide the mixture evenly between 6 x 250ml ovenproof ramekins.

Arrange the ramekins on an ovenproof tray and bake in the oven for 18–20 minutes or until set.

Dust with icing sugar and serve.
