Pavlova with Zesty Lime All Butter Curd and fresh fruit

8 egg whites
1 pinch of salt
1tsp white wine vinegar
5g of cornflour
400g of caster sugar
20ml of vanilla extract
8tbsp Zesty Lime All Butter Curd
Raspberries, Blueberries, Strawberries

Cooking Method

  1. To make the meringue, heat the oven to 140°C/120°C fan/gas 1. Put the egg whites into a bowl and start to whisk. Add the salt and whisk to soft peaks. Whisk in the vinegar and slowly sift in the cornflour.

  2. Add the caster sugar slowly, continuing to whisk until the meringue thickens, add the vanilla extract.

  3. Spoon the meringue into 8 mounds on a baking sheet lined with parchment paper, and form into mini Pavlova shapes. Bake for approx. 2 hours 30 mins until dry. Remove from the oven and cool.

  4. To plate, put a meringue on each plate, spoon a tbsp of Zesty Lime All Butter Curd onto each and top with fruits.
