Moist Honey Cake with Glaze


  • 170g Pure Clear Honey
  • 85g  light muscovado sugar
  • 140g  butter
  • 2 eggs, beaten
  • 200g self raising flour, sieved
  • water

  1. Preheat oven 180C/350F/Gas 3.
  2. Butter and line bottom of a 7in/18cm cake tin.
  3. Put the Pure Clear Honey, sugar and butter into a pan. Add a tablespoon of water and heat gently until melted.
  4. Remove from the heat and mix in the eggs and flour.
  5. Pour into the cake tin and bake for 40-45 minutes until the cake is springy to the touch.
  6. Cool slightly in the tin before turning out onto a wire rack.
  7. While the cake is still warm, make the glaze by mixing the sugar and Pure Clear Honey together with 2-3 teaspoons of hot water. Drizzle onto the honey cake.
