Goat’s Cheese Vol-au-vents

These bite sized savoury pastries are so easy to make and can be prepared up to two days ahead of baking.


375g puff pastry sheet
lightly beaten egg
200g goat’s cheese
1tbsp Roast Red Pepper Sauce
Handful of sliced black olives

  1. Heat oven to 200°C/fan 180°C/gas 6. Unroll a 375g puff pastry sheet and cut out 20 rounds with a 5cm cutter.
  2. Lightly press a smaller cutter into the centre of each round to create a rim. Prick the centre of the pastry with a fork to stop it from rising.
  3. Place on a baking sheet and brush with lightly beaten egg.
  4. In a bowl, crumble 200g goat’s cheese and mix with 1tbsp Roast Red Pepper Sauce.
  5. Fill the centre of each tartlet with the mixture and scatter with a handful of sliced black olives.
  6. Cook for 15-18 minutes until the pastry is golden brown.
  7. Sprinkle with parsley and serve.
