Duck in Orange Sauce

Sweet & tangy duck breast with juicy orange marmalade.
1 Jar Cottage Delight Classic Orange Thin Cut Marmalade​
2 Duck breasts​
2 Medium Waxed Potato's​
200g Green Beans
100ml Double Cream​
20g Butter
Salt and Pepper (seasoning)​

Cooking Method

  1. Bring a small pan of water to the boil, wash green beans and add to the pan. Boil for 15 minutes until partially soft. Peel and cut potato’s into quarters and boil for 20 minutes until soft

  2. Meanwhile, heat a small saucepan on a medium heat with butter. Season duck breasts and lay skin side down in the pan, reduce the heat and leave to sizzle for 10 minutes. Once skin is golden and crisp and has rendered most of its fat, glaze with Cottage Delight Classic Orange Thin Cut Marmalade  turn skin side up and continue cooking for 5 minutes

  3. Once soft, drain potato’s and leave to one side with the lid on. Drain and add green beans to the duck and glaze with Cottage Delight Classic Orange Thin Cut Marmalade 

  4. Add cream to potato’s and mash until smooth and creamy. Remove duck and green beans from the pan, plate up and finish with a layer of Cottage Delight Classic Orange Thin Cut Marmalade
