Cranberry & Brie Bites

- Perfectly sized to disappear, these addictive Cranberry and Brie bites make quick and easy, little appetisers.
- Ingredients:
- 320g ready-rolled puff pastry
- 2tbsp Cranberry Sauce
- 225g Brie, cut into bite size cubes, (aired room temp for a few hours)
- 20g chopped roasted pistachio nuts
Cooking Method
Preheat the oven 180°C/fan 170°C/gas 5. Roll out the pastry and cut into 20 squares, approximately 5cm x 5cm.
Press the squares into a non-stick mini muffin pan. Bake for 8-9 minutes, on a middle shelf of the oven, until edges are golden brown and puffy.
Remove crusts from the muffin pan and place on lined baking sheet. Place the Brie cubes into the centre of the warm crusts.
Place back into the oven for 3-5 minutes. Remove from the oven and top with a spoonful of Cranberry Sauce followed by a sprinkle of pistachios.
Serve immediately.
