Ingredients:
Ready made shortcrust pastry
100g dark chocolate
100g butter, softened
175g light muscovado sugar
2 eggs, lightly beaten
100g plain flour, sifted
250g Luxury Tipsy Mincemeat
300ml double cream
Orange zest

Cooking Method

  1. Preheat the oven to 180°C/160°C fan/gas 4.

  2. Roll out the pastry on a floured surface. Use a fluted 8cm cutter to stamp out the pastry and place into the holes of 2 x 12 hole muffin tins. Chill for 15 minutes.

  3. For the filling, melt the dark chocolate. Combine the butter and light muscovado sugar in an electric mixer, gradually adding the lightly beaten eggs. Next, stir in the sifted plain flour and the slightly cooled melted chocolate. Mix until combined before folding in the Luxury Tipsy Mincemeat.

  4. Add a tablespoon of the filling into each pastry case and bake for 20-25 minutes. Once cooked, remove and leave to cool in the tins for 5 minutes, before transferring to a wire rack.

  5. Whip the double cream with orange zest and top the cold pies and serve.
